The heart of any Alfredo dish is its velvety sauce. In the same pan used for the chicken, create a symphony of flavors by adding a combination of oil and butter. Sauté onions until soft, then mushrooms until lightly browned. Introduce minced garlic to infuse the mixture with its aromatic essence.
To create the creamy base, add 3 and 1/2 cups of half-and-half, bringing it to a light boil. Allow the sauce to simmer for 6 to 10 minutes until it barely begins to thicken. Reintroduce the cooked chicken, accompanied by a generous sprinkling of freshly chopped parsley. Season to taste with salt and pepper for a well-balanced flavor profile.
